Spiced Turkey Patties with Feta ~ Cucumber-mint Raita

- 2 medium cloves garlic shopping list
- 1 1/2 teaspoon kosher salt shopping list
- 2 lbs. ground turkey (thigh meat) shopping list
- 1/4 cup chopped fresh mint shopping list
- 1/4 cup chopped fresh parsley shopping list
- 2 teaspoons smoked paprika shopping list
- 1 1/2 teaspoons ground cumin shopping list
- 1/2 teaspoons ground coriander shopping list
- 1/4 teaspoons cayenne shopping list
- 1/3 cup crumbled feta shopping list
- olive oil, to brush on burgers shopping list
- 6 butter/boston lettuce leaves, for wrapping shopping list

- cucumber-Mint Raita: shopping list
- 1/2 an english cucumber, peeled and seeded, finely chopped shopping list
- 1-2 tablespoons grated onion shopping list
- 1 cup plain, lowfat yogurt (greek/middle eastern style is best) shopping list
- a few tablespoons fresh mint, finely chopped shopping list
- ground cumin, to taste shopping list
- cayenne, to taste shopping list
- kosher salt, to taste shopping list
How to make it
- Mix all ingredients for raita in a bowl and let chill.
- Press or chop the garlic finely and stir together with the salt. Gently break the ground turkey into pieces in a large bowl then mix the garlic paste, fresh herbs, paprika, cumin, coriander, cayenne, and feta into the ground turkey (it’s easiest to use your hands for this). Shape the meat into 6-8 equal 1-inch-thick patties. Brush or rub the patties on each side with olive oil. Refrigerate, uncovered, for at least 20 minutes and up to 4 hours.
- While the burgers are chilling, prepare a charcoal or gas grill. Grill the burgers, covered with vents open, over direct medium heat until nicely marked and just cooked through (an instant-read thermometer inserted in a burger should read 165°F), about 4 to 6 minutes per side.
- Top burgers with Raita and serve wrapped in lettuce or your favorite flatbread.
