How to make it

  • Place potatoes in a pot of salted water and bring to a boil. Cook until fork tender, about 5-10 minutes. Drain and cool.
  • Meanwhile, combine mayo, juice from half the lemon and about 1 tbsp of zest with salt & pepper to taste.
  • Once potatoes can be handled safely, slice or cut into chunks. Toss with mayo mixture, scallions, and celery. Refrigerate until ready to serve.
