Lemony Potato Salad

- 1 pound fingerling potatoes shopping list
- sea salt and black pepper, freshly ground - to taste shopping list
- 1/4 cup mayo shopping list
- 1 lemon zested & juiced shopping list
- 3 celery stalks, chopped shopping list
- 1-2 scallions/green onions, sliced shopping list
- *If you want to add fresh herbs, like parsley, feel free! I wanted to but I didn't have any. shopping list
How to make it
- Place potatoes in a pot of salted water and bring to a boil. Cook until fork tender, about 5-10 minutes. Drain and cool.
- Meanwhile, combine mayo, juice from half the lemon and about 1 tbsp of zest with salt & pepper to taste.
- Once potatoes can be handled safely, slice or cut into chunks. Toss with mayo mixture, scallions, and celery. Refrigerate until ready to serve.
