Stuffed Spinach And Cheese Pasta Shells

- 1-2 boxes jumbo size shell pasta (about 16) shopping list
- 2 tablespoons butter shopping list
- 1/2 cup diced white onion shopping list
- 2 garlic cloves minced or pressed shopping list
- 1 box frozen chopped spinach (you don't have to use all the spinach, depending on preference) shopping list
- 1 cup ricotta cheese shopping list
- 1/4 cup Parmesan cheese shopping list
- 1 large egg, beaten shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. ground nutmeg shopping list
- 1 cup shredded mozzarella cheese shopping list
- water shopping list
- foil shopping list
How to make it
- Preheat oven to 350 degrees
- Thaw spinach and squeeze out excess water. set aside.
- Cook pasta in boiling salt water. Use all the pasta, because some of them will break.
- Cook pasta until tender. Drain and rinse with cold water. Drain again and set pasta aside.
- Melt butter in a skillet on medium heat.
- Add diced onion and saute' until tender.
- Add garlic and saute 1-2 minutes.
- Remove from heat and set aside.
- Drizzle about 1/4 cup water in a shallow, ungreased casserole dish -( rectangle or square)
- In a mixing bowl, combine spinach, ricotta cheese, parmasen cheese, egg, salt and nutmeg. Mix well.
- Add onion and garlic to spinach mixture. Stir well.
- Arrange unbroken shells in casserole dish (with water)
- Spoon 2 tablespoons filling into each shell, repeat until finished.
- Sprinkle mozzerella cheese on top
- cover with foil
- bake at 350 degrees for 20 minutes
