How to make it

  • Preheat oven to 350 degrees
  • Thaw spinach and squeeze out excess water. set aside.
  • Cook pasta in boiling salt water. Use all the pasta, because some of them will break.
  • Cook pasta until tender. Drain and rinse with cold water. Drain again and set pasta aside.
  • Melt butter in a skillet on medium heat.
  • Add diced onion and saute' until tender.
  • Add garlic and saute 1-2 minutes.
  • Remove from heat and set aside.
  • Drizzle about 1/4 cup water in a shallow, ungreased casserole dish -( rectangle or square)
  • In a mixing bowl, combine spinach, ricotta cheese, parmasen cheese, egg, salt and nutmeg. Mix well.
  • Add onion and garlic to spinach mixture. Stir well.
  • Arrange unbroken shells in casserole dish (with water)
  • Spoon 2 tablespoons filling into each shell, repeat until finished.
  • Sprinkle mozzerella cheese on top
  • cover with foil
  • bake at 350 degrees for 20 minutes
