Peppadew Goat Cheese Stuffed Bison Burgers With Balsamic Glazed Onions

- 1 cup chopped onion shopping list
- 1 tbsp oil shopping list
- 1 to 2 tsp balsamic vinegar shopping list
- Pinch of dried thyme or herbes de provence shopping list
- 1 lb ground bison, lean beef, turkey, etc (actually, if it’s more like 1 ¼ lb, it’s better!) shopping list
- 4 oz goat cheese, divided shopping list
- 1/3 cup finely chopped piquant (aka Peppadew) peppers shopping list
- salt and pepper shopping list
- Four burger buns shopping list
How to make it
- Heat oil on sauté pan over medium heat; add onion and cook, stirring often, for 8 to 10 minutes. Stir in balsamic vinegar and thyme; sauté another minute or two. Remove from heat and set aside.
- Mix half of the goat cheese with the Peppadew peppers and set aside.
- Season ground meat with salt and pepper (and anything else you like – I like to add thyme and poultry seasoning if using turkey)
- Divide meat into four sections. Form each section into two thin patties. Place a couple teaspoons of goat cheese mixture on one, then top with the other patty, sealing edges to form one thick patty. Do that four times to make four stuffed burgers.
- Grill over medium to medium high heat for about 4 minutes on each side. Place on buns and top each burger with balsamic glazed onions and remaining goat cheese.
