How to make it

  • Heat oil on sauté pan over medium heat; add onion and cook, stirring often, for 8 to 10 minutes. Stir in balsamic vinegar and thyme; sauté another minute or two. Remove from heat and set aside.
  • Mix half of the goat cheese with the Peppadew peppers and set aside.
  • Season ground meat with salt and pepper (and anything else you like – I like to add thyme and poultry seasoning if using turkey)
  • Divide meat into four sections. Form each section into two thin patties. Place a couple teaspoons of goat cheese mixture on one, then top with the other patty, sealing edges to form one thick patty. Do that four times to make four stuffed burgers.
  • Grill over medium to medium high heat for about 4 minutes on each side. Place on buns and top each burger with balsamic glazed onions and remaining goat cheese.

    These were so good! We LOVE peppadews and goat cheese, so this was perfect. I did combine my own, as you did, but just FYI, apparently you can now buy this combo! I saw some in our market's deli section. :) Added my pic and a quick like, here, Christinems Stuffed Burgers.
