How to make it

  • Simmer juice, water and sugar in a stockpot for 30 minutes. Let cool and then add the yeast.
  • Let the soda stand at room temperature for 24 hours, then use a funnel to pour the soda into bottles (I used a growler I bought from a local brewery to bring their tapped beer home. Recycled and sanitized 2 liter or individual plastic bottles are recommended as they're safer if the pressure becomes too much and they explode). Leave 1 to 2 inches of empty space at the top of the bottle and attach the bottle caps.
  • Write the date on the bottles and store them in a warm, draft-free place, ideally at room temperature, for an additional 24 hours. Then refrigerate - for best results, leave the bottles in the refrigerator for an additional day or two before drinking.
  • I know enough people who have had experiencing brewing beer and have explosion stories, that I was kind of worried. I found myself relieving the pressure of the capped bottles a couple of times a day (it was REALLY cool listening to the gas being released!), and the soda was plenty carbonated come serving time.

    Take a tip from the home brewers, which is what you are doing -- sanitize everything, including the bottles, funnels, stirrers, everything. Bacteria can spoil the finished product and you'll have a stinky mess. And yes, the bottles can explode. Those 2 liter soft drink bottles if heated can leach chemicals. Use glass.
