Martin's Potatoes

- As many potatoes as you think appropriate, washed but not peeled. shopping list
- salt and pepper shopping list
- olive oil shopping list
- mixed herbs of your choice, dried or fresh shopping list
How to make it
- Cut the potatoes as you would for ordinary boiled.
- Cook in salted water until done
- Drain and return to pan
- Drizzle with olive oil and "fry" in the saucepan until browning.
- If using dried herbs, add along with the olive oil
- If using fresh herbs, add when the potatoes start to brown.
- Martin sometimes adds other bits and bobs to this recipe - cooked Brussel Sprouts, chopped garlic, onions.....add these at the 'frying stage.
- Chopped bacon works too.
