How to make it

  • Cut the potatoes as you would for ordinary boiled.
  • Cook in salted water until done
  • Drain and return to pan
  • Drizzle with olive oil and "fry" in the saucepan until browning.
  • If using dried herbs, add along with the olive oil
  • If using fresh herbs, add when the potatoes start to brown.
  • Martin sometimes adds other bits and bobs to this recipe - cooked Brussel Sprouts, chopped garlic, onions.....add these at the 'frying stage.
  • Chopped bacon works too.
