How to make it

  • Cream coconut oil and 1 1/2 cups powdered sugar.
  • Add egg whites, a lil at a time, beating well between each addition.
  • Beat at least 2 minutes after last addition of egg til fluffy and airy.
  • Mix flour, baking powder, baking soda and salt in separate bowl and milk and sour cream together in another. Set aside both.
  • Add vanilla bean scrapings to egg mixture and mix well.
  • Add dry ingredients alternately with wet ingredients mixing just until combined.
  • Add remaining 1/4 cup powdered sugar to chocolate chips and toss to coat.
  • Fold chocolate chips into batter.
  • Spread batter into well greased Bundt or tube pan and bake at 350 for 45-55 minutes, until toothpick comes out almost clean. DO NOT OVER BAKE
  • Let cool on wire rack for about 5 minutes, then invert to serving platter.
  • Sprinkle with sifted powdered sugar, if desired.
