- 2 1/2 cups bleached flour shopping list
- 3 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1 cup coconut oil(at solid stage, not liquid) shopping list
- 1 3/4 cups powdered sugar, divided shopping list
- 4 egg whites shopping list
- 1 cup sour cream shopping list
- 1/4 cup milk shopping list
- 1 8in vanilla bean, scraped shopping list
- 1 cup dark chocolate chips shopping list
How to make it
- Cream coconut oil and 1 1/2 cups powdered sugar.
- Add egg whites, a lil at a time, beating well between each addition.
- Beat at least 2 minutes after last addition of egg til fluffy and airy.
- Mix flour, baking powder, baking soda and salt in separate bowl and milk and sour cream together in another. Set aside both.
- Add vanilla bean scrapings to egg mixture and mix well.
- Add dry ingredients alternately with wet ingredients mixing just until combined.
- Add remaining 1/4 cup powdered sugar to chocolate chips and toss to coat.
- Fold chocolate chips into batter.
- Spread batter into well greased Bundt or tube pan and bake at 350 for 45-55 minutes, until toothpick comes out almost clean. DO NOT OVER BAKE
- Let cool on wire rack for about 5 minutes, then invert to serving platter.
- Sprinkle with sifted powdered sugar, if desired.
