Russian Island Chicken

- 3lbs boneless skinless chicken pieces shopping list
- 1 cup thousand island dressing(bottled or homemade...I used this one 1000 Island Dressing) shopping list
- 1/2 cup Russian dressing(bottled or homemade, I used homemade ... just "winged" it:) shopping list
- 1/2 cup spicy tomato juice drink shopping list
- 2 onions, sliced shopping list
- 2t fresh ground pepper shopping list
- 2T red wine vinegar shopping list
- 3 cups sauerkraut, WELL drained shopping list
- 1/2lb fresh or frozen peas(just thawed) shopping list
- rye bread or rolls or brown rice shopping list
- 8oz goats cheese, crumbled shopping list
How to make it
- Combine all ingredients except peas, rolls/bread/rice and cheese in slow cooker.
- Cook on low for about 4-5 hours until chicken is tender and shredable.
- Shred chicken well and mix together with the sauce.
- Let cook another couple of hours, removing the lid in the last hour or so, if needed, to thicken.
- Add peas just before serving, stirring well to combine.
- Serve over rolls, bread or rice, and top with goats cheese
