Italian Style Fish Stew

- 1 tbsp olive oil shopping list
- 2 medium onions, finely sliced shopping list
- 6 cloves garlic, coarsely chopped shopping list
- 4 celery sticks, sliced shopping list
- 3 ml dried chilli flakes shopping list
- 1 pinch salt and milled pepper shopping list
- 1 can cherry tomato, (410g) shopping list
- 1 cup dry white wine shopping list
- 3 cups vegetable stock shopping list
- 2 cups brown rice, precooked shopping list
- 500 grams firm white fish fillets (I used hake) shopping list
- 1 grated lemon peel shopping list
- 2 tbsp chopped parsley shopping list
How to make it
- 1 Heat oil in a medium-sized saucepan and fry onions until soft.
- 2 Add garlic, celery and chilli and season. Cook for a further 10 minutes.
- 3 Add tomatoes and cook for a few minutes more. Add wine and stock and bring to the boil.
- 4 Reduce heat and add fish.
- 5 Cover and simmer for about 5 minutes until fish is almost cooked. Remove from heat.
- 6 Stir in rice and allow to heat through, covered, for 5 minutes.
- Serve scattered with lemon peel and parsley.
