How to make it

  • 1 Heat oil in a medium-sized saucepan and fry onions until soft.
  • 2 Add garlic, celery and chilli and season. Cook for a further 10 minutes.
  • 3 Add tomatoes and cook for a few minutes more. Add wine and stock and bring to the boil.
  • 4 Reduce heat and add fish.
  • 5 Cover and simmer for about 5 minutes until fish is almost cooked. Remove from heat.
  • 6 Stir in rice and allow to heat through, covered, for 5 minutes.
  • Serve scattered with lemon peel and parsley.
