How to make it

  • Carefully peel the zest from the oranges and cut into very fine matchsticks.
  • Cook the matchsticks in water until they are tender.
  • Coarsely crush the coriander and allspice seeds.
  • Juice the orange and the lemons.
  • Place the pits of the orange and the crushed spices into a tea ball.
  • Combine the blueberries with the citrus juices and brandy.
  • Cook for 10 minutes with the tea ball immersed in the fruit.
  • Add the matchsticks and sugar.
  • Cook until preserves pass the jelly test.
  • Pour into warm clean jars and seal.
  • Process in a boiling water bath for 10 minutes.

    There is a typo in this recipe, I think - 1 Tbsp sugar should be 1 cup. I boiled this for like an hour and a half and it never turned into jelly until I added more sugar. Also, it's a lot of trouble to juice these oranges and lemons for a marginal taste gain. If I were making this again, I would just use the zest and water. I would also just use the ground spices in the fruit itself. After all that time crushing the spices I couldn't even taste them in the end. It turned out fine, but was too much trouble - there are many delicious blueberry jam recipes that don't require this much labor! (and actually turn into jam with the printed instructions!)
