How to make it

  • Combine mayo, Dijon, and chives well and set aside
  • Bake bacon on cooling rack over foil lined cookie sheet at 400 for about 20 minutes.
  • When bacon is done, toss the bread, cut sides down, into the oven for about 5 minutes, as the oven is cooling down. This will just begin to toast the bread.
  • Spread the mayo mixture over the top piece of the focaccia,
  • Layer the bacon on the bottom pieces of the bread and top with tomato slices.
  • Sprinkle with fresh ground pepper.
  • Add lettuce leaves, then the top pieces of the bread.
  • Cut each loaf into 4-6 pieces(we do 4 :)

    For anyone interested in making their own focaccia:
    Size a couple of strips of parchment paper around the dough ball on the second rise so the focaccia will have vertical walls. It slices better and has a better presentation.
