Salsa Roast Beef Quesadilla

I enjoyed Pleclare's Chicken BBQ Pizza (that I made into a quesadilla) so much that I wanted to create my own combination using both similar and different elements. Instead of chicken, I used deli roast beef. Instead of BBQ sauce, I used salsa.
Ingredients
- deli roast beef for one serving (thinly sliced) shopping list
- 1/2 sweet onion, sliced shopping list
- handful of frozen corn shopping list
- 1 small jalapeno, finely diced shopping list
- cream cheese shopping list
- salsa shopping list
- monterey jack cheese shopping list
- 2 flour tortillas shopping list
How to make it
- Saute the onion, corn, jalapeno, and roast beef. Remove from skillet and keep warm.
- Spread 1 tortilla with cream cheese, pile roast beef mixture on top. Add salsa, cheese, and the other tortilla.
- Brown in skillet or bake in oven until cheeses are melted.
