Decadent Pecan Cheesecake

- 1 8 oz package of cream cheese, softened shopping list
- 1/2 c sugar shopping list
- 1 egg, beaten shopping list
- 1/2 tsp salt shopping list
- 1 tsp vanilla extract shopping list
- 2 packages graham crackers shopping list
- 1 1/4 cup pecans, chopped shopping list
- 1/2 stick of butter melted shopping list
- Sauce: shopping list
- 3 eggs shopping list
- 1 c light corn syrup shopping list
- 1/4 cup sugar shopping list
- 1 tsp vanilla shopping list
- Whipped Topping: shopping list
- 1 pint of heavy whipping cream shopping list
- 1 shot glass full of bourbon shopping list
- 1 tsp honey shopping list
How to make it
- Preheat oven to 375.
- In a food processor blend graham crackers until fine, then pour into a bowl and add melted butter and mix well, place mixture in springform pan pushing some of the crust up the sides. Bake for 10 minutes, then remove from oven and set aside.
- in another bowl, cream together the cheese, sugar, egg, salt and vanilla. Pour over the graham cracker crust and sprinkle pecans evenly over the top.
- combine all of the topping ingredients and beat until smooth, poor over pecans and bake for 34-45 minutes until pecan layer is golden brown. Cool on a wire rack.
- While the cheesecake is baking, using a chilled metal bowl add the bourbon, honey and heavy whipping cream and beat on high speed until soft peaks form, place plastic wrap over the bowl and place in refrigerator until cheesecake is ready to be served.
