Cauliflower Bake

- These quantities and suggested ingredients for the middle layer are a guide only. I've never made it the same way twice and it's always good. Depends, also, on whether you're serving it as a main or a side. If a main, I add more of the good stuff in the middle layer. shopping list
- I head cauliflower, cut into uniform-ish florets shopping list
- Grated cheese - enough to cover the top of your dish but see 'sauce' - if your making from scratch, you'll need more. shopping list
- EITHER shopping list
- I cup shelled and cooked shrimp shopping list
- I cup cooked and flaked white fish shopping list
- 1/2 cup crabmeat shopping list
- OR: shopping list
- I cup cooked, diced smokey ham or bacon shopping list
- I cup finely chopped, fried onion shopping list
- 1/2 cup cooked and sliced sausage - not chorizo or that type - the colour comes out and makes the dish look messy - plus it's too oily. A pork or beef sausage works well. shopping list

- Packet cheese sauce - at least 1/2 pint - more if you're making this for 4 people. shopping list

How to make it
- Place a layer of cauliflower in an ovenproof casserole
- Add a layer of your chosen filling
- Put the rest of the cauli on top
- Pour over the prepared sauce
- Top with grated cheese
- Bake for 20-30 minutes, until the cauli is cooked.
- I've also tried this with onion or parsley sauce - still with the cheese on top. Works every time!
