How to make it

  • Use any prepared home made or store bought pizza dough
  • Sprinkle pan with some cornmeal ( my tip, better than greasing and crust slides off pan easily )
  • Place on dough to form crust
  • Brush dough with some olive oil
  • Sprinkle with basil and oregano and garlic salt to taste or fresh minced garlic
  • Layer on sliced or shredded cheese
  • Place on tomato ( my tip use a plum or thick skinned tomato )
  • Scattered on the squeezed dry zucchini ( my tip, forget about draining as squeezing in a clean dish towel really removes the excess liquid!)
  • Bake in a 425F 25 minutes or crust is golden and cheese is melted and browned
  • Let cool in the pan a few minutes and slice in pieces to serve
