How to make it

  • Combine the vinegar, soy, chili sauce, garlic and ginger in a bowl
  • Heat oil in a heavy duty saute pan over medium heat
  • Add the fish, cook a minute on one side
  • Carefully turn over fish and add contents of sauce from bowl and pour over the fish
  • Sprinkle with the scallions
  • Bring to a bubble and then lower heat to a simmer and cook until fish is tender and sauce has cooked off a bit.
  • Carefully transfer fish to serving plates or a platter
  • Spoon over some of the remaining sauce and the scallions
  • Note: one can also use a Thai sweet chili sauce instead of the hot spicy one to vary the flavor of the recipe
  • Serve with rice and spoon over any remaining sauce on the rice
