Ingredients
  • 1 cup well cooked (almost to mush) navy beans
  • 1/2 cup B grade (extra dark) maple syrup
  • 2 tsp maple extract
  • 2 egg replacer "eggs", prepared
  • 1/3 cup brown sugar
  • 1/3 cup melted Earth Balance (or other vegan) margarine
  • 1/2 cup raisins
  • 9-inch unbaked pie crust

Directions
  1. Preheat oven to 350 degrees F.
  2. Puree beans in food processor or blender with maple syrup and maple extract until smooth.
  3. Add egg replacers, sugar and margarine and mix until well blended.
  4. Sprinkle raisins in bottom of pie crust. Pour filling on top and smooth.
  5. Bake pie for 35 to 40 minutes

I've had pinto bean pie before & even tho it sounds gross,it tastes REALLY good !! We have an aunt who loves pintos and we made her pinto bean crepes with a strawberry in each end for camoflauge(sp?)as a joke once.She didn't notice until a lone pinto rolled out halfway thru her crepe! I didn't taste any but they didn't taste as good as the pie, I am sure ! LOL!!
