- 1 beef flank steak or beef brisket ( I used about 2 lbs ) trimmed of any excess fat shopping list
- 3 sweet potatoes cut in thick chunks shopping list
- 3 large carrots cut in thick chunks shopping list
- 2 large green bell peppers cut in chunks shopping list
- 1 head of garlic ( or as you like ) peeled and smashed shopping list
- 2 large onions cut in chunks shopping list
- 1 cup barley shopping list
- 1 box pitted prunes ( omit if you don't like and try dried apricots etc instead ) shopping list
- 1 cup wine- white or red shopping list
- 2 cups broth ( chicken, beef, vegetable- what you like ) shopping list
- 2 large bay leaves shopping list
- 2 dried chipotle chili peppers shopping list
- Coarse salt and black pepper to taste shopping list
- Others spices as you like- see note below shopping list
How to make it
- In a large crock pot, place the vegetables,barley, and liquids .
- Top with the meat. Place the prunes , smashed garlic and chipotle peppers over the meat. Sprinkle with some salt and pepper
- Be sure your vegetables are cut in consistent size pieces for best cooking
- Cook either high 4-6 hours or until vegetables and meat are tender or low 8 -12 hours. Different cookers vary so check halfway through cooking times.
- The consistency should be like a thick stew. with barley and prunes absorbing some of the liquids
- Once cooked, shred the beef with a fork.
- Serve as you prefer, with meat piled over the stew or stew piled over the meat, or mix in all together!
- Note: one can vary the kinds of vegetables, add some honey as a sweetener
- I love the kick of chipotle and spice, so spice up the dish with some cinnamon, chipotle powder, cumin etc. to your liking
- Also freezes well and flavors improve with age!
