How to make it

  • In a large crock pot, place the vegetables,barley, and liquids .
  • Top with the meat. Place the prunes , smashed garlic and chipotle peppers over the meat. Sprinkle with some salt and pepper
  • Be sure your vegetables are cut in consistent size pieces for best cooking
  • Cook either high 4-6 hours or until vegetables and meat are tender or low 8 -12 hours. Different cookers vary so check halfway through cooking times.
  • The consistency should be like a thick stew. with barley and prunes absorbing some of the liquids
  • Once cooked, shred the beef with a fork.
  • Serve as you prefer, with meat piled over the stew or stew piled over the meat, or mix in all together!
  • Note: one can vary the kinds of vegetables, add some honey as a sweetener
  • I love the kick of chipotle and spice, so spice up the dish with some cinnamon, chipotle powder, cumin etc. to your liking
  • Also freezes well and flavors improve with age!

    We are wishing it won't be as bad as they predict, worrisome flooding and power outages and perhaps tornadoes too.

    Irene is heading our way here in the Hampton Roads. Boarded up the beach house on the OBX this past week. Thank God she's dropping to a Cat 1. The last time we lost power here jury rig a generator to a lawnmower engine with a few other modifications and was able to run power to 2 neighbors. Still got the contraption works tested it today, works great. Hope we won't need it.
