How to make it

  • Cake:
  • Grease and flour three round cake tins.
  • Beat whites of eggs until stiff peaks,set aside.
  • Cream in bowl,cream cheese,butter,oil and one cup of the sugar until light and fluffy.Mix in the egg yolks and vanilla,mixing until well incorporated,add the coconut and combine.
  • In separate bowl,combine flour,soda,baking powder,and salt,whisk together.
  • You will alternate into the flour mixture in three additions and buttermilk in two additions.Once complete,fold in the one third of the egg whites to lighten the batter,then gently fold in the remainder.
  • Divide this evenly into tins,and sprinkle one tablespoons of sugar on each.
  • Bake in a 350 degree oven for about 20 minutes or so,until the tops become a beautiful color.
  • Cool in tins for about 10 minutes and then gently run a knife around the edges,invert onto a cooling station that has parchment paper placed,flip right side up and let cool completely.
  • Filling and Frosting:
  • Combine the cream cheese,butter and beat until light and fluffy,add the vanilla and beat until well incorporated.Slowly add the powdered sugar,mixing at low speed until the correct desired consistency is reached.Remove one third of this into another bowl to make the filling.Add the sweet coconut,and three forths of the pecans to the filling,mix well.
  • Taking your first step...place one tablespoon of icing on the cake plate,so as to not slip with the other steps.Place first tier on the first step and add one half of the filling in the center,leaving a border around the outside.Smooth this filling with an offset spatula.
  • Ascend to the next step and press it lightly to level,add the remaining filling.
  • Your onto the top step now,so gently place the tier on top,smooth it out.
  • Place in the freezer to firm up the filling.
  • Crumb coat the cake with icing and return to freezer for about 20 minutes,remove from cold storage and frost the tiers with the reminder of the the icing,add the pecans to the sides while the icing is still wet,you may smooth and pipe on decorative border all away around...but I don't...I place culinary flower petals around the perimeter of the smoothed steps,storing the tiers in the refrigerator and bringing out with wine,candle light,a good book,and music.
