Ingredients
  • 3 cups fresh basil leaves
  • 4 to 6 garlic cloves
  • 1/2 cup pine nuts, walnuts, or pecans
  • 3/4 cup shredded parmesan Cheese
  • 2 to 3 tablespoons shredded Romano cheese
  • 2/3 cup Olive Oil

Directions
  1. Process basil and garlic in a food processor until chopped.
  2. Add pine nuts and cheeses, and process until blended, stopping to scrape down sides.
  3. With processor running, pour oilive oil through food chute in a slow steady stream; process until smooth.
  4. Chill upto 5 days.
  5. Yield 1 cup

That sounds really good, Zena - and easy besides! I love pesto...will be trying this one!


As the end of summer looms large in the PacNW, this is a good recipe to have on hand - I think I have a couple of basil bushes. = )
