How to make it

  • Stir flour and salt together.
  • Cut in shortening until mixture resembles coarse mealy crumbs.
  • Add water and gently combine to form a dough. Add more water by tablespoons if necessary.
  • Do not overwork!
  • Roll out and press into pie tin.
  • If prebaking:
  • Preheat oven to 425F.
  • Prick bottom and sides of dough.
  • Bake 10-15 minutes.

    Have you tried this with a rice flour blend? I was looking for a gluten free pie crust with a more subtle taste. I like buckwheat, but it has a stronger taste than I want for the mild, sweet pie I want to make.
