Polenta Peach Cobbler

- 3 pounds sliced peeled peaches (about 6 cups) shopping list
- 2 tablespoons lemon juice shopping list
- 1/2 tablespoon turbinado sugar shopping list
- 1 teaspoons cornstarch shopping list
- 1/4 cup all-purpose flour shopping list
- 1/2 cup whole-wheat flour shopping list
- 2 tbsp turbinado sugar shopping list
- 1/4 cup yellow cornmeal shopping list
- 1 1/2 teaspoons baking powder shopping list
- 1/2 teaspoon ground cloves shopping list
- 1/4 teaspoon salt shopping list
- 2 tablespoons chilled stick margarine, cut into small pieces shopping list
- 1/3 cup fat-free plain soymilk shopping list
How to make it
- Preheat oven to 375°.
- Combine first 5 ingredients in a large bowl; stir gently.
- Spoon into a 9-inch square baking pan.
- Combine flours through salt in a medium bowl.
- Cut in margarine with a pastry blender or 2 knives until mixture resembles peas.
- Add soymilk, stirring just until moist.
- Drop dough onto fruit mixture to form 9 mounds.
- Bake for 40 minutes or until topping is golden brown.
