Quintessential Quinoa Salad

- 1 1/2 cups quinoa shopping list
- 2 1/2 cups salted water shopping list
- 1 398ml can of chickpeas, drained and rinsed shopping list
- 4 oz. feta cheese, cut into cubes shopping list
- 1 pint cherry tomatoes, washed and halved shopping list
- 1 small red onion, finely diced shopping list
- 1/2 sweet yellow pepper, chopped shopping list
- 1/2 sweet orange pepper, chopped shopping list
- 6 cups fresh baby spinach leaves shopping list
- 1 cup toasted sunflower seeds shopping list
- Dressing: shopping list
- 2 big cloves of fresh garlic, minced shopping list
- 1 tbsp. Dijon mustard shopping list
- 1 tsp. brown sugar shopping list
- 1/4 cup balsamic vinegar shopping list
- 1 cup olive oil shopping list
- pinch of salt shopping list
- fresh ground pepper shopping list
How to make it
- Bring water to boiling point. Add Quinoa then cover and simmer for 15-20 minutes or until all the water is absorbed. Set aside to cool.
- Combine all the ingredients for the dressing except the olive oil in a jar with a tight fitting lid (I just used a mason jar). Shake vigorously, then add olive oil in two batches, shaking between each addition.
- To assemble the salad: In a large bowl, combine the cooked Quinoa, tomatoes, peppers, chickpeas, Feta Cheese, sunflower seeds and spinach. Drizzle with dressing, 1/3 cup at a time and toss gently or serve dressing on the side for guests to put on themselves.
