How to make it

  • add butter and chopped onions to a large pot or dutch oven
  • cook onions until tender
  • add paprika and when stirred in quickly dump in 1 cup cold water to prevent bitter taste from forming
  • add all other ingredients and then add water to just cover them
  • simmer until meat is tender. readjust seasonings if needed
  • i cooked it covered for a bit then uncovered for 45 min to reduce it some
  • serve with bread, noodles, dumplings or rice

    use good paprika...i used a cheap brand and it ruined the batch

    Some people who are of Hungarian descent are emotional about the addition of potatoes or tomatoes or sometimes even carrots to this dish. I think its more traditional to some if these are left out. Shepherds make goulash in Hungary in a kettle over a fire in the fields and let it cook all day. This is an amazing recipe, I got this from Szuzsy Bee and its her family recipe.
