Creamy Rice And Beans

- 1/2 cup white jasmine rice (uncooked) shopping list
- 3/4 cup chicken stock (or broth) shopping list
- 2 cloves of garlic - peeled and smashed shopping list
- Fresh juice of 1 lime shopping list
- 1 can black beans - rinsed and drained shopping list
- 1/4 cup low fat sour cream shopping list
- 1/4 cup shredded mexican-blend cheese shopping list
- 1/4 cup fresh chopped cilantro shopping list
- 1/2 tsp Chile Powder shopping list
- salt to taste shopping list
How to make it
- Stir together rice, stock and garlic in medium saucepan
- Heat on medium-high heat to boiling
- Stir once, cover and reduce heat to low
- Simmer rice on low heat for 20 minutes or until liquid is almost absorbed
- Add lime juice to rice
- Re-cover rice and continue to simmer for 2 additional minutes
- Lightly fluff rice with fork and stir in black beans - re-cover and heat additional 3 minutes or until beans are heated
- Remove rice from heat
- Stir in sour cream, cheese, cilantro and chile powder until well blended
- Add Salt to taste
- Serve immediately!
