Drunken Irish Onion

- 1 large white onion (about 1 lb) shopping list
- 1 yellow onion (same) shopping list
- ½ purple onion (half of same) shopping list
- 5 tbs butter shopping list
- 2 tbs sugar shopping list
- 2 tbs flour shopping list
- 1 tsp salt shopping list
The Broth
- 2 ½ qts water/ beef broth( plus enough beef base to make a broth, str to your taste) shopping list
- 1 small white onion grated ( I used one about the size of a golf ball) shopping list
- 1 pint heavy cream shopping list
- 6 oz white cheddar grated shopping list
- 2 tsp thyme(or more to taste, honestly just a guess I eyeballed this one) shopping list
- ¼-½c Irish whiskey shopping list
- 6-8 stalks green onion shopping list
The Soda Bread
- 2 cups buttermilk shopping list
- 4 cups flour shopping list
- 5 cloves garlic shopping list
- 2 tbs sugar shopping list
- 1 tsp salt shopping list
- 1 tsp baking soda shopping list
- 3 oz white cheddar shopping list
How to make it
Caramelized onions
- thinly slice all the onions in the first group add all ingredients
- cook on med heat stirring often enough not to burn until the onions end up a golden yellow brown color, about 30-40 min, and then incorporate the flour, but once you've got your onions going you can start the broth
The Broth
- combine your broth, the grated onion, whiskey, and the thyme, bring to a boil and the reduce to a simmer till you've cooked off most of the alcohol.
- add the cream, whisk in the cheese until its melted and incorporated, and add the onions, bring up to a simmer and season with salt and pepper to taste
- when both are finished combine the two into the same pot
The Bread
- though this is listed last, I actually set this up first and put it in the oven about when I got the onions started
- preheat your oven to 400°
- this is just modified Irish soda bread recipe
- grate or garlic press the garlic, something that macerates it nicely, I used a japanese ginger grater, makes a nice paste of just about anything
- combine all the ingredients but the flour
- mix in the flour til its the consistency of a heavy biscuit dough
- use some pan spray, and spread the dough on a baking sheet into a rough mound about 1½ inch thick and bake for about 30 min give or take till its done
- you can cut a cross into the bread to divide it, cook it in individual biscuits, or even pan fry it in cast iron if you like, just adjust your cooking times a bit for the smaller the quantities use your judgement or just try one when they seem done
