How to make it

  • Partially freeze chicken.
  • Dice onion, slice mushrooms, shred Parmesan.
  • Slice chicken to desired-size pieces (smaller is better); place in fridge.
  • Start water for noodles; when boiling, add noodles and cook to desired doneness.
  • Meanwhile, saute vegetables in 2 tablespoons butter until soft; remove from pan to a bowl; sprinkle with a bit of Parmesan.
  • Partially melt 1-2 tablespoons butter in same skillet; add oil, stir and heat; add chicken with Cajun or Creole spice to taste. Cook chicken through until beginning to get a bit crunchy (you might not want it that dry).
  • Drain noodles. Add remaining butter, sour cream, Ranch, remaining Parmesan, and black pepper. Shred chicken and stir in, then add sauteed vegetables.
  • Can be eaten hot or cold, it's just yummy!
