Ranch Chicken N Noodles

- 8-12oz raw boneless, skinless chicken shopping list
- 2/3 cup onion shopping list
- 4oz fresh mushrooms shopping list
- 3/4 cup fresh Parmesan, div. shopping list
- 4-6oz medium egg noodles shopping list
- 1/2 cup (1 stick) unsalted butter (no substitutes), div. shopping list
- 1-2 tablespoon olive oil shopping list
- Cajun or Creole spice (I used Tony Chachere's) shopping list
- 1/2 cup (4oz) sour cream shopping list
- 1/3 cup ranch dressing shopping list
- black pepper shopping list
How to make it
- Partially freeze chicken.
- Dice onion, slice mushrooms, shred Parmesan.
- Slice chicken to desired-size pieces (smaller is better); place in fridge.
- Start water for noodles; when boiling, add noodles and cook to desired doneness.
- Meanwhile, saute vegetables in 2 tablespoons butter until soft; remove from pan to a bowl; sprinkle with a bit of Parmesan.
- Partially melt 1-2 tablespoons butter in same skillet; add oil, stir and heat; add chicken with Cajun or Creole spice to taste. Cook chicken through until beginning to get a bit crunchy (you might not want it that dry).
- Drain noodles. Add remaining butter, sour cream, Ranch, remaining Parmesan, and black pepper. Shred chicken and stir in, then add sauteed vegetables.
- Can be eaten hot or cold, it's just yummy!
