How to make it

  • In a large skillet heat 1 T olive oil and brown the beef on medium high See Photo
  • Once the beef is brown and the juices have kinda cooked themselves out, lower the heat to medium low
  • Add the rest of the ingredients accept the butter, mozzarella, parmesan cheese, orzo and 1 T of basil, which will be used as garnish
  • Prepare 1/2 cup orzo as per the instructions on the box, but cut the time for al dente a little short..if the box says 8-10 minutes, cook it for about 7 minutes because you'll be cooking it more later
  • Add the prepared, strained orzo to the meat mixture and combine with grated parmesan cheese See Photo
  • Turn off the heat and allow to sit for a few minutes.
  • Preheat oven to 350
  • Remove and discard the caps from the bell peppers and clean out all seeds and ribs with a paring knife (if you don't want to toss 'em out, cut them up and add them to the stuffing)
  • Wash the peppers under cold water and put them in a shallow baking dish with about 1/2 an inch of water in it
  • Stuff the peppers with the meat/orzo combination, place 1/2 T butter on top of each pepper and cover with foil See Photo
  • Bake covered for 45 minutes
  • Remove foil and cap the peppers with the thick slices of mozzarella cheese
  • Cook another 15 minutes uncovered, or until the cheese is completely melted and starting to bubble
  • Enjoy!
