Orzo 'n Beef Stuffed Peppers

- 4 medium bell peppers (any color…I used orange) shopping list
- 1 lb ground beef (I used meatloaf mix, which is ground beef/pork/veal combo) shopping list
- 1 T olive oil shopping list
- 2 cloves garlic, smashed and chopped shopping list
- 1 can diced tomatoes shopping list
- 1/2 tsp dry oregano shopping list
- 2 tsp salt shopping list
- 1 tsp pepper shopping list
- 3T fresh chopped basil shopping list
- 1/2 cup orzo shopping list
- 2 T butter shopping list
- 1/2 cup fresh grated parmesan cheese shopping list
- 4 thick slices of mozzarella shopping list
How to make it
- In a large skillet heat 1 T olive oil and brown the beef on medium high See Photo
- Once the beef is brown and the juices have kinda cooked themselves out, lower the heat to medium low
- Add the rest of the ingredients accept the butter, mozzarella, parmesan cheese, orzo and 1 T of basil, which will be used as garnish
- Prepare 1/2 cup orzo as per the instructions on the box, but cut the time for al dente a little short..if the box says 8-10 minutes, cook it for about 7 minutes because you'll be cooking it more later
- Add the prepared, strained orzo to the meat mixture and combine with grated parmesan cheese See Photo
- Turn off the heat and allow to sit for a few minutes.
- Preheat oven to 350
- Remove and discard the caps from the bell peppers and clean out all seeds and ribs with a paring knife (if you don't want to toss 'em out, cut them up and add them to the stuffing)
- Wash the peppers under cold water and put them in a shallow baking dish with about 1/2 an inch of water in it
- Stuff the peppers with the meat/orzo combination, place 1/2 T butter on top of each pepper and cover with foil See Photo
- Bake covered for 45 minutes
- Remove foil and cap the peppers with the thick slices of mozzarella cheese
- Cook another 15 minutes uncovered, or until the cheese is completely melted and starting to bubble
- Enjoy!
