Chicken Biriyani

- 2 lbs chicken(cut to medium size pieces) shopping list
- 5 cups rice shopping list
- 8-9 cups water shopping list
- 5 tsp oil shopping list
- pulao ingredients: shopping list
- (4 bay leaves shopping list
- 4 cardamom shopping list
- 4 cloves shopping list
- 1 tsp saunf shopping list
- 1/2 inch cinnamon stick shopping list
- 2 mace flowers shopping list
- 3 capers shopping list
- 1 star anise) shopping list
- 1 onion finely sliced shopping list
- 2 tsp mint leaves(finely chopped) shopping list
- 2-3 green chilllies(slit) shopping list
- salt to taste shopping list
- 1 tsp lemon juice shopping list
- For the masala: shopping list
- (1/2 sliced onion, 3-4 green chilles, 11/2 inch sliced ginger, 5 garlic cloves, 2 tsp coriander powder, 3 cloves,1 inch cinnamon, 2 tsp shredded coconut, 1 tsp coriander leaves, grind all with water to from a thick paste) shopping list
- Marinate chicken with 1 tsp curd, 1 tsp lemon juice, 1/2 tsp salt, 2 pinch turmeric powder, cover it and refrigerate for an hour. shopping list
How to make it
- Wash and soak the rice for 1 hour, drain and keep aside.
- Heat oil in a pan cooker, add pulao ingredients and fry for a minute.
- Add chopped onion and fry till golden.
- Add chicken and heat for 5 minutes, add mint leaves, slit chilles, 1/2 tsp salt and fry for 5 minutes.
- Add the masala and fry for about 10 minutes,(till masala completely cooks).
- Now add water and salt and heat till water boils.
- Add rice and stir.
- Add lemon juice, mix well and close the lid.
- pressure cook for 1 whistle, simmer for 5 minutes and turn off the stove.
- Allow to cool, mix the rice well and serve.
