Carrot Loaf Recipe Yumyum / All my dishes

This is similar to zuchinni bread only made wiht carrots. Whenever I bake this I need to double the recipe because one is never enough!

Ingredients
  • 1/2 cup margarine, softened
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 3 tablespoons orange juice
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts (optional- I never put this in)
  • 2 cups grated carrots

Directions
  1. Cream softened margarine with sugar
  2. add egg, juice, dry ingredients and nuts
  3. add grated carrots and mix well
  4. placde in a 9 1/2 x 5 1/2- inch greased loaf pan
  5. bake at 350 for 30 minutes, or until inserted toothpick comes out clean
  6. serve warm or at room temperature
  7. eat and enjoy!
