Dynamite Shrimp With Stir-fried Veggies And Vermicelli

Veggies
- 1 small head napa cabbage, chopped shopping list
- 3 cups chopped carrots (about 3-4 carrots) shopping list
- 2 cups chopped daikon radish (about 2) shopping list
- 2 tbsp peanut or vegetable oil shopping list
- rice vinegar to taste shopping list
- soy sauce to taste shopping list
- Gomasio (sesame seeds, seaweed & sea salt) or toasted sesame seeds to taste shopping list
- sea salt, to taste (if using plain sesame seeds instead of Gomasio) shopping list
- black pepper, to taste shopping list
shrimp
- 1 1/4 pounds medium shrimp, peeled & deveined (I removed the tails) shopping list
- 1 tbsp peanut or vegetable oil shopping list
- Batter: shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 1 egg shopping list
- 4 tbsp corn starch shopping list
- Sauce: shopping list
- 1/2 cup mayo shopping list
- 3 tbsp Sriracha hot sauce shopping list
- 2/3 tsp sesame oil shopping list
- 1/3 rice vinegar (or more to taste) shopping list
vermicelli
- 1 tbsp peanut or vegetable oil shopping list
- 8 oz. vermicelli noodles, cooked according to package instructions & drained shopping list
- 4 green onions, chopped - dark green parts reserved shopping list
- 3 garlic cloves, minced shopping list
- 2/3 tsp sesame oil shopping list
How to make it
Veggies
- Heat oil in large skillet over medium heat. Add carrots and saute for 2-3 minutes. Add radish, cabbage, pepper and salt if using and saute for another 3 minutes, or until desired texture is reached. Remove from heat, add soy sauce, vinegar, and Gomasio/sesame seeds and toss well. Cover to retain heat.
Shrimp
- Heat oil in medium skillet over medium heat. Combine batter ingredients. Toss shrimp in batter and add to skillet. Cook for 2-3 minutes on each side. Transfer to paper towel lined plate. Meanwhile, combine sauce ingredients. Place into a sealable container and add about half of sauce, seal and toss to coat. Add more sauce as desired.
Vermicelli
- Heat oil in large skillet over medium heat. Add remaining ingredients and saute for 3-5 minutes.
- Top with remaining green onion for garnish.
