Ingredients

How to make it

  • In large stock pot, combine all ingredients other than 1 cup of stock, polenta and half and half.
  • Cook over medium high heat for about 30 minutes until pork is cooked through and veggies are tender.
  • In small sauce pan or microwave safe bowl, heat polenta with remaining 1 cup of stock, stirring often, until softened and whisk well.
  • Add to soup and mix well.
  • Heat to boiling and cook about 2 minutes, stirring constantly to keep it well mixed.
  • Add half and half and heat just until heated through.

    Nice combo Keni. The corn meal is an interesting touch. Polenta is adapted from Italian, my grandfather always called it that, but corn is native to the Americas. Maybe calling it Polenta makes it highfalutin. :-) RJ

    I never would have thought to use polenta as a thickener!! Great idea! This would go well with a grilled cheese for us to make a great dinner! Sounds good!

    Keni, we eat polenta often, but not usually in a soup, so this looks interesting. Also, the jalepeno cheddar bread really got my attention. Was that homemade or store bought? and... bet you can tell what's coming next... recipe? I looked but couldn't find. sounds like a yummy combination. thanks!
