Taco Junk Recipe
I got this off the web but it is such a versitile recipe I kept the basic recipe but add all sorts of things to it depending on my taste buds at the time or change how I use it in a meal. We love it

Ingredients
  • 1 lb lean ground beef or ground turkey
  • 1 (16 ounce) can black beans
  • 1 (16 ounce) can stewed tomatoes (chopped)
  • 1 pkg taco seasoning mix or 1 1/4 oz of taco seasoning
  • 1 envelope ranch dressing mix
  • Optional ingredients:
  • 1 clove garlic (or more if you are garlic lovers like me)
  • chopped onions if you like to taste
  • can of drained corn
  • black olives
  • whatever hits your fancy :)

Directions
  1. Fry meat until just done.
  2. Drain off excess oil.
  3. Return meat to pan and add remaining ingredients.
  4. Cover and simmer on low for 1 hour.
  5. (I actually found that simmering for about 50 minutes worked well. It thickened it up just great).
  6. You can put it in a tortilla with some sour cream or other garishes as your taste buds dictate.
  7. Serve it in a bowl with some cheese on it or other garnishes.
  8. It's good as a dip with chips too.
  9. Pile it on a bunch of tortilla chips and melt some cheese over it all.
  10. The combos are endless depending on your imagination.
