  • 1 Nectarine (or other fruit of choice)
  • Handful of berries
  • 1-2 Tablespoons raw sugar
  • 1-2 Tablespoons brown sugar
  • 2-3 Tablespoons toasted coconut
  • 2-3 Tablespoons lightly crushed crisped rice cereal

Directions
  1. Take nectarine and cut it into bite size pieces.
  2. Arrange them in the bottom of a shallow, wide bowl.
  3. Sprinkle over the top some (maybe about a tablespoon each) raw sugar and brown sugar.
  4. Microwave for about 45 seconds, just enough for the sugar to melt and the fruit to be warm but not mushy. If you wanted to be more traditional you could also stick it in the oven for a few minutes (maybe 10) at 300 (F). This would obviously lengthen the preparation time. This is just approximation, I haven't tried preparing this this way.
  5. Sprinkle coconut and cereal over the top and enjoy!

This is a great alternativ to the usual cobbler, so little fat,using rice cereal is a so cool it gives you some crust like texture.
