Coconut Fruit Crisp

- 1 nectarine (or other fruit of choice) shopping list
- Handful of berries shopping list
- 1-2 Tablespoons raw sugar shopping list
- 1-2 Tablespoons brown sugar shopping list
- 2-3 Tablespoons toasted coconut shopping list
- 2-3 Tablespoons lightly crushed crisped rice cereal shopping list
How to make it
- Take nectarine and cut it into bite size pieces.
- Arrange them in the bottom of a shallow, wide bowl.
- Sprinkle over the top some (maybe about a tablespoon each) raw sugar and brown sugar.
- Microwave for about 45 seconds, just enough for the sugar to melt and the fruit to be warm but not mushy. If you wanted to be more traditional you could also stick it in the oven for a few minutes (maybe 10) at 300 (F). This would obviously lengthen the preparation time. This is just approximation, I haven't tried preparing this this way.
- Sprinkle coconut and cereal over the top and enjoy!

This is a great alternativ to the usual cobbler, so little fat,using rice cereal is a so cool it gives you some crust like texture.
I like the fruit combination. You have my 5 fork rating
