How to make it

  • Put the cream, condensed milk and juice of 4 limes on a blender or food processor and whizz.
  • Melt the gelatin with 2 tbsp water in a small sauce pan over low heat. Do NOT let it boil!! It will make the mousse bitter.
  • Blend the melted gelatin into the mousse and blend.
  • Pour on a nice serving bowl and put it in the freezer for at least 1 hour.
  • Before serving sprinkle the zest of 1 lime on top.
