Ingredients

How to make it

  • Preheat oven to 350 (F).
  • In a large bowl, mix eggs, vanilla, applesauce (or pumpkin/oil substitution) until combined. (If using liquid stevia, mix this in now also.)
  • Add brown sugar (or Sucanat), banana, and other fruit of your choice. (If using chocolate chips, do not add them now - make this your last addition after milk step below.)
  • In another bowl, mix oats, optional nuts, if using, salt, baking powder, flax seed and cinnamon.
  • Dump dry ingredients into wet ingredients & mix well.
  • Pour in milk and stir until combined.
  • Spray one 12 and one 6 cup muffin tin with cooking spray or use cupcake liners.
  • Scoop mixture evenly into muffin cups.
  • Bake 35-40 minutes or until the center of each muffin is set.
  • Cool & enjoy or freeze in gallon freezer bags (after cooling).
  • (I've been keeping my week's supply in the fridge and microwaving for 45 seconds to warm before eating.)

    Made these the other day, but not in muffin tins, used a 9x13 pan. Just sliced up like square muffins. Very easy recipe, and very versatile. I will be doing these again several different ways. Hubby did like them, only need to add the full sugar next time. I only used 3/4 cup cuz of my sweet over ripe banana, but obviously it wasn't sweet enough. Used fresh strawberries too. Very good, Brooke! I see you don't have a pic, but mine is in a pan, so I don't think it would do it justice as far as the muffin look. ;')
