These were really easy to make and very nutritious! I followed followed the recipe to the tee, using fresh strawberries as my fruit. Also added the walnuts suggested. Except I didn't make muffins, I used a 9x13 pan, and cut in squares. See full description on recipe. For those of you who HATE oatmeal, think oatmeal muffin, not ooey gooey texture wise. LOL

Im always looking for a new way for oatmeal. I have all these ingredients too. Except for walnuts. Have tons of almonds though.. Even the unsweetened applesauce. Thanks for the heads up......BTW, What is stevia?

Stevia is a non-sugar sweetener with no calories. I think its made from herbs or a plant of some kind.

Thank you, Frankie. I never heard of that stuff. I'll stick with all sugar. I dont have any non sugar sweetener or non calorie stuff.

Hey, Donna - Thanks for the great review, I'm so glad it was a success!
Hope you try them Mr.P - they are very delicious. I haven't used the stevia at all, I use brown sugar.
Thanks again! I'm going to have one for breakfast in a few minutes.

I made this following most of the recipe. I dont have a cupcake pan, so I had to make it in a casserole dish. I used black berries and almonds. It made for a purple-y turnout. I sprinkled powdered sugar on before eating half : ) Added pics to the recipe page. Thanks, Essentialingredients, for a great recipe

You ate half? :-D I guess you got your oatmeal for the day! Looks delicious. I like the blackberry/almond combo idea.

Oh, I guess it should say I ate 1/4. It made two casserole dishes and I ate 1/2 of one

I'm so glad that you tried it, MrP! And that you liked it too, of course! Thanks so much for the great review. I want to try your combination, now let me ask you, did you use fresh or frozen blackberries? And, did the seeds give you any trouble when you ate it? I made blackberry waffles once and it drove me crazy eating them with all of the seeds. :) I'd be curious to know if they are invasive in this application or not really noticeable.
Again, thanks so much for your nice comments - very much appreciated! :)

Essentialingredients, I picked the blackberries a few months ago and froze them. As for the seeds, there was that "grit" that the berries have. But I kind of like that about them. I also didnt chop the almonds real fine because I like a bit of crunch. I hope this answers your questions
