HONEY DIJON CHICKEN Recipe
This is really an awesome tasting chicken. Most anytime I make it i have to double the recipe cause they want 2nds for sure!

Ingredients
  • 2 Tbs. cornstarch
  • 1 3/4 C. chicken broth
  • 1 1/2 Tbs. honey
  • 1 Tbs. Dijon-style mustard
  • 4 boneless chicken breast halves
  • 1 large carrot, cut into 2 to 3 inch strips
  • 1 medium onion, sliced
  • 4 C. hot cooked rice, cooked without salt and with chicken broth instead of water.

Directions
  1. Mix cornstarch, broth, honey and mustard.
  2. Cook chicken in nonstick skillet until browned.
  3. Add carrot and onion.
  4. Cover and cook over low heat 5 min. or until vegetables are tender-crisp.
  5. Add cornstarch mixture.
  6. Cook and stir until mixture boils and thickens.
  7. Serve with rice.

We will be having this today for supper.


This was delicious! I doubled the ingredients for the sauce - it went very well with rice. On the side I had cherry tomatoes cooked in brown butter and lemon juice along with a side of spinach. Next time, I would use less cornstarch because it got a little thick.
