Oatmeal Muffins With Nutella Frosting

Muffins
- 1/2 cup old fashioned oats shopping list
- 1/2 cup buttermilk shopping list
- 1/4 cup brown sugar shopping list
- 3 tbsp butter, melted and cooled shopping list
- 1 egg shopping list
- 1 tsp vanilla extract shopping list
- 1/4 cup whole wheat flour shopping list
- 1/4 cup AP flour shopping list
- pinch salt shopping list
- 1/2 tsp baking powder shopping list
- 1/4 tsp baking soda shopping list
frosting
- 2 tbsp butter, softened shopping list
- 2 tbsp confectioners sugar, sifted shopping list
- 1/4 cup nutella shopping list
- Trader Joe's Elegant cocoa Pearls (or similar) for decoration shopping list
How to make it
Muffins
- Soak oats in buttermilk until softened, about 30 minutes.
- Preheat oven to 375F. Line muffin tin with cupcake liners, or prepare with cooking spray.
- In a mixing bowl, cream together brown sugar and melted butter. Add egg and vanilla, whisk.
- In another bowl, combine flours, baking powder, soda, and salt.
- Add flour mixture to wet ingredients, about half at a time. Mix until smooth. Add softened oats and stir until just incorporated.
- Divide into muffin tin. Bake for 12-15 minutes, until a toothpick inserted comes out clean (mine took 14 minutes).
- Transfer to cooling rack and allow to cool completely.
Frosting
- Beat together butter, sugar and Nutella until smooth.
- Frost cooled muffins. Top with Cocoa Pearls.
