How to make it

  • Heat oven to 400°, in a saucepan over medium-high heat, bring the water and butter to rolling boil; stir in flour and salt. Reduce heat to low and stir vigorously until mixture forms a ball, about 1 minute; remove from heat. Beat in eggs, one at a time; continue beating until smooth. Stir in the chopped oysters. Drop dough by spoonful’s onto ungreased baking sheets. Bake 25 minutes, or until puffed and golden. Serve hot with cocktail sauce.
  • Makes 4 to 5 dozen appetizers.
  • You may use about 16 ounces of Lump crabmeat in place of the oysters, rinsed and squeezed dry.
