How to make it

  • Preheat oven to 200
  • In skillet, add oil and turn heat to medium
  • Add pepper and onion and saute until crisp tender
  • Add pepper relish and steak
  • Cook until meat no longer pink
  • Remove from heat and cool
  • Add cheese and mix to combine
  • Add meat mixture to middle of dough discs
  • Add water to rim of disc
  • Fold in half and seal with a fork
  • In Dutch oven, pour oil up 3-4 inches
  • Add thermometer and turn heat to high
  • When oil reaches 350 add empanadas in batches
  • Fry until golden brown, about 2-3 minutes and then flip and fry other side
  • Remove to baking rack and put in oven to keep hot while cooking remaining enpanadas
  • I added extra pepper relish to mayo for a dipping sauce
