Balsamic Mushroom Chicken

- 4 skinless, boneless chicken breasts or 6-8 chicken tenders shopping list
- salt and pepper shopping list
- 2 cans of mushroom, or approx 3/4 lb of fresh shopping list
- 2 TBSP flour shopping list
- 2 TBSP oil (olive or your fav) shopping list
- 5 gloves garlic - or garlic to taste shopping list
- 1/3 c balsamic vinegar shopping list
- 1 - 1 1/2 c chicken broth shopping list
- thyme - dried - approx 1/4 tsp shopping list
- bay leaf shopping list
How to make it
- Season the chicken with salt and pepper. Season the flour with salt and pepper and coat the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
- Add the garlic. Turn the chicken breasts and throw the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for about 20 minutes, turning chicken occasionally.
- Take out the bay leaf and serve chicken either over noodles, rice. Works great by itself with a side of wild rice.
