Mediterranean Chili

- 2lbs ground meat(lamb, venison, chicken, lean beef, pork, turkey or any combo) shopping list
- 2 cans cannelini(white kidney) beans shopping list
- 2 14oz cans diced tomatoes(I used one italian seasoned and one regular), undrained shopping list
- 14oz spicy tomato sauce(from the Mexican section) shopping list
- 1 red onion, diced shopping list
- 4 cloves garlic, minced shopping list
- 2 roasted red peppers, diced shopping list
- 1-4 roasted hot peppers, diced(optional) shopping list
- 3T chili powder shopping list
- 2T ground cumin shopping list
- 1 heaping T hot or sweet paprika shopping list
- 1T fresh oregano shopping list
- 1t dry mint(or sub a couple t fresh, minced) shopping list
- 1 lemon(zest and juice) shopping list
- 1t fresh ground pepper shopping list
- feta cheese crumbles, sliced olives and Greek yogurt for serving, if desired shopping list
How to make it
- Combine all ingredients in slow cooker and cook, on low, for about 6 hours.
- Serve topped with feta, olives and yogurt, if desired.
- I also served this with flat breads drizzled with olive oil, sprinkled with a touch of Greek seasonings and garlic powder and just a touch of corn meal, then toasted in the oven.
