How to make it

  • Mix dry ingredients together, Add 1 egg to ground beef and mix 1/3 of ingredients with ground beef, 1/3 with ground turkey and 1/3 with ground pork.
  • Pat the ground beef flat onto a sheet of Wax paper trying to cover as much of the width as possible (About 1/2 Inch Thick). Place flat in the freezer and repeat with the Pork and the turkey.
  • While those are in the freezer cooling to a firm texture (Not frozen)…
  • Place another sheet of wax paper out and Lay out 4 or 5 pieces of twine lengthwise on it… Weave a web of the bacon over top, use the whole width of the wax paper. Overlap the slices in a web as you go until all the bacon is used up See Photo. The twine will be used to tie the meat loaf together… over the outside of the bacon.
  • Remove the meat from the freezer and layer each one on top the others, Pork, Beef and then turkey over top each other. Pat the three layers together gently Bacon, Pork, Beef, & Turkey. Place the Dowel or wooden spoon across the end of the layers and roll them over the dowel keeping them firm and not letting it fall out of the sides See Photo. (One option is to lightly sprinkle Cheddar between the layers)
  • Place the roll of meat over the bacon and roll the bacon around it...Once the Roll is complete, use the twine to tie the net of bacon on the outside See Photo. Squish the ends in so they are firmly part of the loaf.
  • Place the whole loaf back in the freezer for an hour or until very firm but not frozen through.
  • Remove from the freezer, remove the dowel, and insert the rotisserie tine / bar, slide on forks with a couple of the forks under the twine. Place on the rotisserie and cook on medium - high using indirect heat for 45 minutes or until the internal temp reaches 155 - 165. (Make sure you place a pan under it so the grease doesn't drip in the BBQ). Baste with BBQ sauce for the final 1/2 of the cooking time
  • Let Stand for 10 minutes before slicing. See Photo
  • Thickly Slice and Serve this with Cheesy Garlic Toast ,Twice baked Stuffed Potatoes' and a Cobs of corn for an awesome meal.. See Photo

    well deffinatley giving this a try asap - need to make sure this is served up with lots of that cheese taost and corn - and I can just see a huge scoop of garlic mashed potato with all of it!! thanks for sharing having friends over this weekend on the menu

    Welcome to GR. Going to have to give this sucker a try, just for the cussed orneriness of it. Maybe add a bit of chile powder or such like. Fun post though. Thanks. RJ
