Pesto Rosso - Sun-dried Tomatoes Pesto

- 1 cup extra virgin olive oil shopping list
- 1/2 cup toasted cashew nuts shopping list
- 2 tbsp basil leaves, minced shopping list
- 15 pitted green olives shopping list
- 1/3 cup freshly grated parmesan cheese shopping list
- 1 tbsp tomato paste shopping list
- 12 sun-dried tomatoes in oil, chopped shopping list
- 3 cloves garlic, chopped shopping list
- 1/2 tsp chilli flakes shopping list
- 2 tsp balsamic vinegar shopping list
- 2 tsp sugar shopping list
- 1/2 tsp paprika shopping list
- salt to taste shopping list
How to make it
- Place all ingredients in a food processor except the olive oil.
- Whiz it up and slowly add the olive oil.
- That's all and it is ready. What a joy!
