How to make it

  • preheat oven to 425
  • fill pie shell with rhubarb and sprinkle one tbsp of flour over rhubarb.
  • beat together eggs, sugar and remaining tbsp of flour till frothy.
  • spoon evenly over rhubarb.
  • bake at 425 for 10 minutes
  • lower heat to 325 and cook an additional 30 minutes.
  • cool completely
  • In the end, you have a crunchy topping and a custard like middle, yummy!
