How to make it

  • Combine lemon juice, honey and several dashes of hot sauce in small bowl. Whisk well to incorporate.
  • Cut each slice of prosciutto down the middle to create about 1/2 inch ribbons. Depending on the size of your original slices, you might get 2 or 3 out of each piece. Each should already be several inches in length.
  • Sprinkle one cut side of each pear piece with just a tiny bit of extra fine salt.
  • Spread on a thin layer of the cheese over the salt.
  • Wrap one prosciutto ribbon around each slice "barber pole" style.
  • Drizzle with the lemon juice mixture and serve immediately.

    My MIL would LOVE These! She always wraps cantaloupe in prosciutto when we go over there and we seriously stand there and eat a million of them. I KNOW this is what I'm doing next time she comes over!!
