How to make it

  • Combine stock, vinegar, Worcestershire, oil and seasonings in a non-reactive mixing bowl. Whisk together to incorporate.
  • Place beef in a large zipper bag. Pour marinade over it. Seal and place in refrigerator.
  • Marinate for at least 4-6 hours, longer for tougher cuts of meat.
  • When ready to cook, preheat grill to medium high. Grill to desired doneness, turning halfway through. An approximate guide would be 8-10 minutes for rare, 10-12 for medium rare, and 12-15 minutes for medium. Note, you may also cook these under the broiler.
  • Let meat rest for 5 minutes before serving.
