Ingredients
  • 3 eggs, separated
  • 5 tbsp pure maple syrup
  • ½ tsp vanilla
  • Pinch salt
  • ¼ c slivered almonds

Directions
  1. Preheat the oven to 350F
  2. Beat yolks until pale and frothy, then add syrup, vanilla and salt.
  3. In another bowl, whip egg whites to stiff peaks.
  4. Fold whites into yolk mixture.
  5. Heat a large, oven safe pan and spray with cooking spray.
  6. Add almonds, then egg mixture.
  7. Cook over low heat 8 minutes. Transfer to oven and cook 8 minutes.
  8. Serve hot.

My hubbie's allergic to almonds (nuts in general)... what else would you suggest to replace them?


They're completely optional... you can leave them out if you prefer, or add in something like cranberries or blueberries.


I made this last night for dinner for my kids, and they asked for it again for breakfast. It was absolutely delicious!
