Pesto Beans And Gnocchi

- 2lbs gnocchi, uncooked shopping list
- 1/2lb fresh green beans, trimmed shopping list
- 1 stick butter shopping list
- a drizzle of olive oil shopping list
- 1 medium onion, diced shopping list
- 4 cloves garlic, minced shopping list
- 1/2 cup prepared pesto shopping list
- 1/2lb italian sausage cooked, drained well and crumbled OR you could use diced pancetta shopping list
- 1/2 lemon shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Boil water for gnocchi.
- Add green beans and cook for about 5-6 minutes, total. Add gnocchi when appropriate per package directions and cook them with the beans as they finish cooking. (ie I put my beans in the boiling water and let them cook 2 minutes, then added the gnocchi and it cooked for 4 more)
- Drain and rinse briefly in cold water. (let drain while continuing rest of the dish)
- In large stock pot or similar, melt butter and olive oil over medium heat.
- Add onions(and pancetta, if using) and cook, stirring often, until onions are tender.
- Add garlic and cook another 5 minutes or so.
- Add pesto, sausage and salt and pepper and stir well to combine.
- Add gnocchi and green beans and toss to coat. Heat just until heated through.
- Add the juice from the 1/2 lemon and stir once more. Serve immediately.
